Slow Cooker Beef Bourguignon

Ingredients

5 slices of bacon chopped

3-3.5 lbs. boneless beef chuck

1-2 tsp. minced garlic

1 shallot chopped

1 cup red cooking wine

2 cups of beef broth

8 ounces tomato sauce

¼ cup of soy sauce

¼ cup of flour

2 Tbsp. fresh Thyme

5 medium carrots, cut into 1-inch chunks

1-2 lbs. of red potatoes, cut into chunks

8 ounces of mushrooms, quartered

Parsley garnish

Directions

  1. In a large cast iron, cook bacon over medium heat until crisp. Put bacon into slow cooker.
  2. Add garlic and shallots to same cast iron cook for approximately two minutes. Transfer to slow cooker.
  3. Salt and pepper the beef on all sides. Add beef to the skillet and sear on each side for 3-5 minutes. Transfer beef to slow cooker.
  4. Add the red wine to skillet scraping down the brown bits on the bottom and sides. Allow it to simmer and reduce. Slowly add the broth, tomato sauce, and soy sauce. Slowly whisk in the flour. Make sure that flour is completely mixed into the sauce, then add the sauce to the slow cooker.
  5. Add thyme, carrots, potatoes, and mushrooms to the slow cooker. Give it a good stir and cook on low until beef is tender for 8-10 hours, or on high for six hours.
